Recipes:
MASHED CAULIFLOWER
Medium head cauliflower
Fat-free butter spray
Approximately 1/4 cup fat free half-and-half
Dash of salt
Dash of pepper
Place a steamer basket in a large saucepan with 1/2 cup of water. Place the cauliflower in the steamer and bring to a boil over high heat. Reduce the heat to medium, cover, and cook for 4 minutes, or until crisp-tender. Puree in a food processor or blender, adding the butter spray and half-and-half. Season with salt and pepper. Serves 4.
