ITALIAN VEGETABLE SOUP

Suitable for a carb-based snack, lunch or even a bedtime snack during diet steps two and three. 275ml or 1/2pt = one 11-20g net carb serving.
1/2 tsp salt
Cooking oil spray 
1lb lean minced beef 
4oz cup diced onion 
4oz sliced celery 
2oz sliced carrots 
1 can red kidney beans, drained 
1 can black eyed beans, drained 
16 oz low sodium beef stock
Handful of finely chopped fresh parsley 
2 cans chopped tomatoes
1/4 teaspoon each dried oregano and dried basil black pepper, to season 
8 oz shredded cabbage grated Parmesan cheese (optional)

In a pan coated with cooking oil spray, brown the meat and drain off fat. Add all the ingredients, except the cabbage and cheese, to the meat and bring to a boil. Lower the heat, partially cover and simmer for 30 minutes. Add the cabbage and simmer for another 15 minutes. Serve topped with grated Parmesan or freeze in individual pots. Serves 6 to 8.
